We visited a plant which produces bammy, fried bread made from casava, a traditional breakfast food. As we watched, the cooks made hundreds of these small "cakes" in what seemed like 100 plus degree heat. We learned that the small company was environmentally friendly concerning its waste products. This environmental awareness and action was a theme we found echoed in a number of the enterprises we visited.
